Do you really know what you are eating anymore? Ethoxylated Diglycerides? Cellulose? Xanthan Gum? Calcium Propionate? Ammonium Sulfate?

Ethoxylated Diglycerides are actually types of fats. These are items that are put into foods in order to help the foods have a longer shelf life.

Xanthan Gum is a substance produced by bacterial fermentation or synthetically and used in foods as a gelling agent and thickener.

Ammonium Sulfate is potentially dangerous to both people and the environment. 

Eat food, these days its easier said than done, especially when 17,000 new products show up in the supermarket each year. Yet they don’t deserve to be called food – more like food like edible substances. They’re highly processed concoctions designed by food scientists, consisting of mostly ingredients derived from corn and soy that no normal person keeps in the pantry, and they contain chemical additives with which the human body has not been long acquainted.

Here’s me saying it is vital that everyone takes the initiative to learn about the food industries money making way of thinking, why you are addicted or crave foods, you need to educate yourself in order to increase your longevity. It is simple as if you can not pronounce the ingredients it is best that you don’t buy it. Check your labels, be pro-active about your health and nourish your body with food that thrives instead of food that never dies.

Eggplant Lasagna 3

Recipe for my Coconut Oil & Tumeric Dukkah Roasted Eggplant, Beef & Rocket Lasagna – Makes 1 – 13 minutes – Simple

1/2 an Eggplant – 1/2 tbsp Tumeric Dukkah (Either homemade or bought) – 1/2 tbsp Softened Coconut Oil – 1 cup of Rocket – 150g Organic Beef Mince – 1/2 tbsp Tomato Paste – Fresh Basil Leaves – 1/4 Brown Onion – 7 Cherry Tomatoes, Halved – 1 Garlic Clove – Chilli

1. Preheat the oven to 180c. With half the eggplant, thinly slice 5 ‘lasagna sheets’ about 0.5mm thick and place on a baking tray. Toss in the softened coconut oil and dukkah. Allow to roast for about 8 minutes or until soft.

2. In a hot pan, sauté the brown onion, garlic and chilli until browned. Add the beef mince and allow to cook. Mix in the basil, tomato paste and halved tomatoes and mix together on a low heat. Allow the flavours to infuse.

3. With the eggplant sheets, on top of one layer on a few spoonfuls of the beef mixture and then add the rocket. Add another eggplant sheet and continue until all the ingredients are combined.

4. Place back in the oven for about 3 minutes. Serve warm and with a side salad!

*The presentation of this eggplant stack is simple, just take your time!
